I'm trying, but it's not producing meaningful results either:

There is a built-in stat that sounds like what you want, called "Fold to Raise After T CBet", so take a look at that.

For background though; you cannot just change a stat expression like that without making new Columns. What the stat references needs to exist.
Take a look at the Custom Stats Guide to see how Statistics and Columns work together. The Tutorial: Custom Reports and Statistics goes into much more detail with examples of how to create new stats based on a similar stat, etc.
