There is "EV adjusted" stat in Holdem Manager:

How can I add this stat to PT3?

In PT3 all-in EV can only be displayed for individual hands (as it isn't stored in the database) so you can only add it to reports showing individual hands. You can also enable the EV line in the Graphs tab.
PT4 stores all-in EV values in the database and we have stats like this built into several reports by default.
